Ellen's zuchini Bread

  • 3 eggs
  • 3 cups white sugar
  • 1 cup vegetable oil
  • 2 cups grated raw zuchini
  • 3 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons cinnamon
  • 1 cup ground walnuts
Beat eggs until light and foamy. Add sugar, oil, zuchini and vanilla and mix well.Combine with all other dry ingredients. Pour into 2 9x5x3 glass bread loaf pans.
Bake at 350 for 1 hour. Test for doneness with a sharp knife. If the knife comes out with wet dough cook another 5 or 10 minutes. Cool for an hour and then remove from pans. And then ENJOY!!! YUMMM!
